Do push-ups, too. Also remember the cardiovascular stuff for endurance. BUT, as I said above, lifts are much more than strength. Body positioning and balance are important. Your Question 2 is a lot harder. 29-years-old is not too old to start ballet. However, if you want to be a professional in a MAJOR company, you have to be realistic....if you don't have other, strong dance training from early years, a major company will be out of the question. Regional companies will be just as "picky." BUT, there are a lot of small, local companies that might have interests, if you can be happy with the Podunk Ballet. (I would!) I don't buy that "it takes 8 years" crap. Everybody is different. It depends on the time you have to invest and the enthusiasm with which you pursue ballet. What are your goals in ballet?
